About 6 servings
2 tablespoons of olive oil or just enough to coat bottom of crock pot
1 cup of dry lentils
1 small onion, chopped (onions are on the “Clean 15” list, so does not have to be organic)
1.5 cup of shredded green cabbage, depending on preference (cabbage does not need to be organic as it is on the “Clean 15” list)
3 teaspoons of minced garlic
1 (14 ounce) smoked sausage, preferably without MSG, gluten or added nitrites
1 (14.5 ounce) can of diced tomatoes, preferably organic, natural or dice up 3 or 4 fresh tomatoes depending on size.
2 cubes of vegetable bouillon (I like Rapunzel Vegan with Sea Salt & Herbs because ingredients are organic & non-hydrogenated)
5 cups of water or depending on your preference
2 bay leaves
½ teaspoon cayenne pepper
Salt & pepper to taste
Throw everything in the crock pot on high for 6 hours & enjoy!
